Message from the Guest Editors
Fruits and vegetables are highly perishable commodities whose quality and nutritional value are strongly influenced by postharvest physiological and biochemical processes. Understanding these processes is essential for reducing postharvest losses, maintaining sensory and nutritional quality, extending shelf life, and improving the sustainability of fresh produce supply chains.
